- Salt & black pepper, to taste
- ž cup frozen peas
- ½ cup milk
- 2 tablespoons butter
- Âź teaspoon garlic powder
- ½ cup shredded cheddar cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C). Scrub and dry the russet potatoes. Prick them with a fork, rub with olive oil, and sprinkle with salt. Bake for 45â50 minutes until fork-tender.
- In a large skillet, heat olive oil over medium heat. Brown the ground beef or lamb, then add onion, carrots, and garlic; cook until softened.
- Stir in tomato paste, thyme, rosemary, salt, and pepper. Add beef broth and simmer for about 10 minutes. Mix in frozen peas before removing from heat.
- Once potatoes are baked, slice off the tops and scoop out most of the flesh into a mixing bowl. Mash with milk, butter, garlic powder, salt, and pepper until smooth; mix in cheese if desired.
- Fill each potato skin with meat filling and top with mashed potatoes. Bake again at 400°F (200°C) for 10â15 minutes until golden.
