- 1 (10 ounce) can Ro-tel diced tomatoes & green chilies (drained)
- 1 (14 ounce) can black beans (drained & rinsed)
- 1 (12 ounce) can corn (drained)
- 1/2 teaspoon smoked paprika
- 1 cup Mexican cheese blend
- Fresh cilantro (chopped, optional, to taste)
Instructions
- Preheat the oven to 400Β°F.
- Cut chicken breasts in half lengthwise and season with garlic powder, chili powder, salt, and pepper.
- In an oven-safe skillet, heat olive oil over medium-high heat. Sear chicken for about 3-4 minutes on each side until golden. Remove from skillet.
