Ingredients
- 1 salmon fillet (about 150g)
- 2 eggs
- 1 cup cherry tomatoes
- 1 cup asparagus spears
- 5–6 button mushrooms
- Olive oil or butter
- Salt and black pepper
Instructions
- Season the salmon fillet with salt and pepper. Heat olive oil in a skillet over medium heat and sear the salmon for about 3-4 minutes on each side until golden brown. Remove from the pan and keep warm.
- In the same skillet, add more oil if needed and sauté the mushrooms for about 4-5 minutes until tender. Season with salt.
