Ingredients

Scale
  • 6 roma tomatoes (halved)
  • 1 cup cherry tomatoes (whole)
  • 1 medium yellow onion (roughly chopped)
  • 1 head of garlic (halved)
  • 1/4 cup extra-virgin olive oil
  • 1 cup vegetable broth (or chicken broth)
  • 1/4 cup heavy cream
  • 5 large basil leaves (plus more for serving)
  • 1 teaspoon balsamic vinegar
  • Kosher salt and freshly ground black pepper
  • 1 french or sourdough baguette (thinly sliced)
  • Olive oil and shredded gruyère cheese (enough to cover the surface of the toasts)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In an oven-safe dish, combine halved roma tomatoes, whole cherry tomatoes, chopped onion, halved garlic heads, olive oil, salt, and pepper. Roast for 30-40 minutes until tender.
  3. For an alternative stovetop method, simmer all ingredients in a large pot until soft.
  4. Prepare gruyère toasts by slicing the baguette, drizzling with olive oil, topping with shredded gruyère cheese, and seasoning. Bake until cheese is melted and golden.
  5. Once roasted, blend the tomato mixture with vegetable or chicken broth and basil until smooth. Stir in heavy cream and adjust seasoning.
  6. Serve hot topped with crispy gruyère toasts and fresh basil.
