  • 2 twists black pepper

  • 1 tablespoon orange juice (or lemon juice)
  • 2 teaspoons maple syrup (or honey)
  • 2 teaspoons mustard
  • Β½ teaspoon salt (for dressing)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Optionally, line a baking sheet with parchment paper.
  2. Trim the woody ends from 1 pound of Brussels sprouts and remove any damaged outer leaves. Rinse and dry thoroughly.
  3. Halve the Brussels sprouts lengthwise and place them on the baking sheet. Drizzle with Β½ tablespoon olive oil, sprinkle with Β½ teaspoon salt and black pepper, then toss to coat evenly.
  4. Roast in the preheated oven for 20-25 minutes until slightly charred on the outside and tender inside.
  5. While they roast, prepare the dressing by mixing 2 tablespoons olive oil, 1 tablespoon apple cider vinegar, 1 tablespoon orange juice, 2 teaspoons maple syrup, 2 teaspoons mustard, Β½ teaspoon salt, and black pepper in a jar or bowl until well combined.
  6. Serve the roasted Brussels sprouts on a platter with the dressing drizzled generously over top.
