- 1 small onion, minced

- 1 1/2 cups milk (or heavy cream)
- 1 cup shredded gruyere cheese (plus extra for topping)
- 4 lb thinly sliced potatoes
- Salt and black pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, melt butter and sauté minced onion until translucent. Add grated garlic and thyme; cook for another minute.
- Sprinkle flour over the mixture and stir constantly for about two minutes. Gradually whisk in milk until smooth and slightly thickened. Remove from heat and mix in gruyere cheese until melted; season with salt and pepper.
- In a greased baking dish, layer half the sliced potatoes, pour half the sauce over them, then repeat with remaining potatoes and sauce. Top with extra shredded gruyere cheese.
