  • 1 tsp salt

  • 16 oz cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Mix chocolate cookie crumbs with melted butter until crumbly. Press into a springform pan and bake for 10 minutes. Allow to cool.
  2. In separate bowls, combine dry ingredients (flour, cocoa powder, baking soda, baking powder, salt) and wet ingredients (sugar, vegetable oil, eggs, buttermilk, vinegar, vanilla extract). Mix wet into dry until just combined. Divide into prepared pans and bake for 25 to 30 minutes until a toothpick comes out clean. Cool completely.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time along with vanilla extract and sour cream/heavy cream. Pour over cooled crust and bake at 325°F (160°C) for about 40–45 minutes until slightly jiggly in the center. Chill.
  4. Assemble by layering one red velvet cake on a serving plate with frosting in between layers. Frost the top and sides of the entire cake.
  5. Warm jam with water and lemon juice; pour over the top of the cake allowing it to drip down the sides. Decorate as desired.
