  • 5 egg yolks
  • ⅓ cup granulated sugar (plus more for topping)
  • ⅔ cup pumpkin puree
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • tiny pinch ground cloves
  • 34 small-medium pumpkins (for serving)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Hollow out mini pumpkins by cutting off the tops and removing seeds.
  3. In a mixing bowl, heat heavy cream and vanilla until warm.
  4. Whisk egg yolks and granulated sugar together until thickened.
  5. Gradually combine the warm cream mixture with the egg yolk mixture while whisking continuously.
  6. Stir in pumpkin puree and spices until well mixed.
  7. Pour custard into hollowed pumpkins.
  8. Bake in a water bath for 65 minutes or until set but jiggly.
  9. Cool at room temperature before refrigerating for at least 3 hours.
  10. Just before serving, sprinkle sugar on top and use a kitchen torch to caramelize.
