- 5 egg yolks
- ⅓ cup granulated sugar (plus more for topping)

- 3–4 small-medium pumpkins (for serving)
Instructions
- Preheat oven to 325°F (163°C).
- Hollow out mini pumpkins by cutting off the tops and removing seeds.
- In a mixing bowl, heat heavy cream and vanilla until warm.
- Whisk egg yolks and granulated sugar together until thickened.
- Gradually combine the warm cream mixture with the egg yolk mixture while whisking continuously.
- Stir in pumpkin puree and spices until well mixed.
- Pour custard into hollowed pumpkins.
- Bake in a water bath for 65 minutes or until set but jiggly.
- Cool at room temperature before refrigerating for at least 3 hours.
- Just before serving, sprinkle sugar on top and use a kitchen torch to caramelize.
