  • 4 Mini Pumpkins (or ramekins)
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 325°F (160°C). If using mini pumpkins, cut off the tops and scoop out the seeds.
  2. In a mixing bowl, whisk together the heavy cream and granulated sugar until well combined. In another bowl, mix egg yolks, vanilla extract, pumpkin puree, cinnamon, ginger, and salt. Gradually add the cream mixture while whisking until smooth.
  3. Pour the custard mixture into each mini pumpkin or ramekin. Place them in a baking dish and fill it with hot water halfway up the sides of the containers.
  4. Bake for about 30 minutes or until set but slightly jiggly in the center.
  5. Let cool in the water bath for about 10 minutes before refrigerating for at least two hours.
  6. Just before serving, sprinkle a thin layer of granulated sugar on top and caramelize using a kitchen torch or broiler.
