  • For the cinnamon swirl: ΒΌ cup melted butter, ΒΌ cup brown sugar, 1 tsp ground cinnamon
  • For the cream cheese glaze: Β½ cup powdered sugar, Β½ tsp vanilla extract, 2–3 Tbsp milk

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line a muffin tin with liners or spray with nonstick spray.
  2. In a mixing bowl, whisk together the pumpkin puree, melted butter (or oil), granulated sugar, egg, and vanilla until smooth.
  3. In another bowl, combine flour, baking soda, baking powder, salt, and ground cinnamon.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Prepare the cinnamon swirl by mixing melted butter, brown sugar, and ground cinnamon in a small bowl.
  6. Fill each muffin cup halfway with batter. Add a spoonful of cinnamon swirl mixture on top and then fill with more batter. Use a toothpick to create swirls.
  7. Bake for 20–25 minutes or until a toothpick comes out clean.
  8. While cooling slightly, prepare the glaze by whisking together powdered sugar and milk until smooth; drizzle over muffins.
