  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon seasoning
  • 1 onion, minced
  • 3 garlic cloves, minced
  • 1 green bell pepper, minced
  • ΒΌ cup fresh cilantro, chopped
  • β…“ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs, beaten
  • Coconut oil for frying

Instructions

  1. Preheat oven to 356Β°F (180Β°C).
  2. Grease a casserole dish.
  3. In a bowl, season the ground beef with sazon and adobo; set aside.
  4. SautΓ© onion, garlic, and green bell pepper in coconut oil until soft; add cilantro.
  5. Brown the seasoned ground beef in the skillet.
  6. Stir in tomato sauce and olives/capers; simmer for 5–10 minutes.
  7. Prepare plantains by peeling and slicing them into strips.
  8. Fry plantain strips in coconut oil until golden brown; drain excess oil.
  9. Layer half of the fried plantains in the casserole dish; brush with beaten egg.
  10. Add half of the ground beef mixture and sprinkle with dairy-free cheese.
  11. Repeat layers ending with plantains brushed with egg and topped with cheese.
  12. Bake for about 20 minutes until golden brown on top.
  13. Let cool slightly before serving.
