  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown; remove from skillet.
  2. In the same skillet, sautΓ© onion until softened. Add garlic and stir for about 30 seconds, then add diced red bell pepper and sautΓ© until softened.
  3. Stir in cubed pineapple and cook for about two minutes until slightly caramelized.
  4. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper to the skillet. Bring to a boil; reduce heat to low. Cover and simmer for about 18–20 minutes or until rice is fully cooked.
  5. Return cooked chicken to the skillet and stir well to combine all ingredients evenly. Heat through before serving.
  6. Serve garnished with sliced green onions and sesame seeds.
