  • 2 1/2 cups Diced Peaches (fresh or canned)

  • 1 3/4 cup Almond Milk
  • 1/4 cup Dairy-Free Greek Yogurt
  • 1 Flaxseed Egg (1 tbsp flax meal + 3 tbsp water)
  • 1 tablespoon Chia Seeds

Instructions

  1. Preheat the oven to 350Β°F (180Β°C) and grease an 8-inch x 8-inch baking dish.
  2. Prepare the flax egg by mixing one tablespoon of flax meal with three tablespoons of lukewarm water; let it thicken for about 10 minutes.
  3. Dice the peaches and set aside.
  4. In a large bowl, whisk together the flax egg, almond milk, yogurt, melted coconut oil, vanilla extract, and maple syrup until well combined.
  5. In another bowl, combine oats, chia seeds, shredded coconut, salt, and cinnamon; mix into the wet ingredients until just combined.
  6. Gently fold in the diced peaches.
  7. Pour the mixture into the greased baking dish; top with additional peach slices if desired.
  8. Bake for 35-45 minutes until golden brown and set in the center.
