  • 1 Tbsp sunflower oil
  • 3/4 cup cornstarch
  • 1/3 cup all-purpose flour
  • 1/2 cup white distilled vinegar
  • 1/2 cup cane sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic (crushed)
  • 1 Tbsp orange juice concentrate

Instructions

  1. Cut the chicken into bite-sized pieces. In a bowl, whisk together the egg, sunflower oil, salt, and pepper. Gradually mix in cornstarch and flour until well combined.
  2. Heat oil in a deep fryer or large pot to 350Β°F (175Β°C). Coat each chicken piece in the egg mixture and fry in batches until golden brown. Drain on paper towels.
  3. In a saucepan, mix white vinegar, cane sugar, water, soy sauce, red pepper flakes, garlic, ginger zest, and orange juice concentrate over medium heat until sugar dissolves.
  4. Mix cornstarch with water to create a slurry; add to the saucepan and stir until thickened.
  5. Toss fried chicken in the sauce until well coated. Serve hot over steamed rice or noodles.
