- 1 tbsp chopped tomato
- 1 tbsp chopped red onion or green onion
- Lime juice, to taste
Instructions
- Preheat your oven to 425Β°F (220Β°C). Toss cubed potatoes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
- Season the fish fillet with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium-high heat and sear the fish for 3-4 minutes per side until cooked through.
- In a mixing bowl, mash the avocado until creamy. Stir in chopped tomato, onion, lime juice, and salt to taste.
- Serve the pan-seared fish alongside roasted potatoes with a generous scoop of guacamole.
