Ingredients
- 1 lb chicken breast or thighs, cut into bite-sized pieces
- 2 cups fresh cheese tortellini
- 4 cloves garlic, minced
- 4 tbsp butter
- 1 tsp crushed red pepper flakes
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tbsp fresh basil or parsley, chopped
- Salt and black pepper to taste
Instructions
- Season the chicken pieces with salt and black pepper. In a large pot over medium-high heat, melt 2 tablespoons of butter. Add the seasoned chicken and cook until browned and cooked through, about 6–8 minutes. Remove the chicken from the pot and set it aside.
- In the same pot, add another tablespoon of butter. Once melted, add the minced garlic. Sauté for about 30 seconds until fragrant. Stir in crushed red pepper flakes for extra heat.
- Pour in the chicken broth while scraping up any browned bits from the bottom of the pot. Stir in heavy cream and bring to a gentle simmer.
- Add fresh cheese tortellini to the pot. Cook according to package instructions, usually around 4–6 minutes, until tender and heated through.
- Return the cooked chicken back into the pot. Stir in grated Parmesan cheese until melted. Let everything simmer together for an additional 2–3 minutes so flavors meld beautifully.
