- 1/2 Tbsp dried oregano
- 1/2 tsp black pepper
- 1 tsp paprika

Instructions

- In a mixing bowl, combine olive oil, minced garlic, tomato paste, lemon juice, lemon zest, salt, oregano, black pepper, and paprika to create a smooth sauce.
- Chop potatoes into even pieces and pat both chicken and potatoes dry.

- Bake for approximately 40 minutes until chicken reaches an internal temperature of 165ยฐF (75ยฐC) and potatoes are tender. Let rest for 5 minutes before garnishing with parsley.
