  • 4 cups Vegetable broth
  • 1 medium Zucchini, chopped
  • 1 cup Green beans, chopped
  • 1 cup Canned kidney beans, drained and rinsed
  • 1 tsp Italian seasoning
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black pepper or to taste
  • Optional: Red pepper flakes to taste
  • Optional for garnish: Parmesan cheese, chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, celery, and carrots; sautΓ© for 5 minutes until softened.
  2. Stir in diced tomatoes, tomato paste, and vegetable broth. Bring to a simmer and cook for 5-10 minutes.
  3. Add zucchini, green beans, and kidney beans; stir well. Simmer for an additional 20-30 minutes until vegetables are tender.
  4. Season with Italian seasoning, salt, black pepper, and optional red pepper flakes to taste.
  5. Serve hot, garnished with optional Parmesan cheese and fresh parsley.
