  • Β½ tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 175g soft light brown sugar
  • 2 large eggs
  • 200ml vegetable oil
  • 200g grated carrots
  • 100g walnuts, chopped
  • 75g crystallized ginger, chopped
  • For icing: 100g unsalted butter, 100g icing sugar, 100g cream cheese

Instructions

  1. Preheat oven to 170Β°C (325Β°F) and prepare a springform cake tin.
  2. Combine dry ingredients in a bowl; set aside.
  3. In a separate bowl, beat sugar, eggs, and oil until mixed. Gradually add dry ingredients along with grated carrots, walnuts, and crystallized ginger.
  4. Pour batter into the prepared tin and bake for 45–55 minutes. Cool in the tin on a wire rack.
  5. For icing, mix butter and icing sugar until creamy; then add cream cheese and grated ginger.
  6. Once cooled, ice the cake and decorate with additional walnuts and crystallized ginger.
