  • 2–3 large red bell peppers (about 1.5 pounds)
  • 1/2 cup walnuts
  • 1/4 cup breadcrumbs
  • 2 cloves garlic (chopped)
  • 1 tablespoon lemon juice
  • 3 teaspoons pomegranate molasses
  • 1 tablespoon cayenne pepper
  • 1 tablespoon crushed Aleppo pepper (or paprika)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. Slice the red peppers in half lengthwise, remove the seeds and stems, and place them on lightly oiled baking sheets.
  3. Roast for 20-30 minutes until the skins are charred.
  4. Once roasted, cover the peppers with paper towels to steam them briefly for easier peeling.
  5. Roughly chop the peeled peppers and add them to a food processor.
  6. Lightly toast the walnuts in a dry pan for about one minute; then add them to the food processor with the peppers.
  7. Add breadcrumbs, garlic, lemon juice, pomegranate molasses, cayenne pepper, Aleppo pepper, cumin, salt, and olive oil.
  8. Blend until smooth and adjust seasoning as desired.
  9. Transfer to a serving bowl and garnish with extra chopped walnuts or parsley if desired.
