Instructions

  1. Preheat your oven to 350ยฐF. Line a 9ร—5 loaf pan with parchment paper.
  2. In a large mixing bowl, combine zucchini, eggs, vegetable oil, Greek yogurt, and vanilla; mix well.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. To create the cinnamon swirl, mix sugar and cinnamon in a small bowl.
  6. Pour half of the batter into the loaf pan; sprinkle half of the cinnamon-sugar mixture on top. Add the remaining batter and top with the rest of the cinnamon-sugar mixture. Swirl gently with a knife.
  7. Bake for 60โ€“65 minutes or until a toothpick comes out clean. Cool before slicing.
