  • 115 g unsalted butter
  • 135 g light brown sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100–300 g mini eggs

Instructions

  1. Preheat your oven to 190ΒΊC and line a 9Γ—9 inch baking tin with parchment paper.
  2. In a mixing bowl, combine melted butter with light brown sugar and granulated sugar until creamy.
  3. Add the egg and vanilla extract, then mix well.
  4. Gradually incorporate flour, bicarbonate of soda, salt, and cornflour until just combined.
  5. Fold in milk chocolate chips and most of the mini eggs.
  6. Transfer to the prepared tin, pressing down firmly and decorating the top with remaining mini eggs.
  7. Bake for 18–22 minutes until the top appears dry. Allow cooling before cutting into bars.
