  • 1 pound trotolle pasta
  • 6 ears roasted corn
  • 1/2 cup diced red onion
  • 1/2 cup diced jalapeño pepper
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded Cotija cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 lime (juiced)
  • 12 teaspoons Tajín
  • Freshly snipped cilantro for garnish
  • Additional Tajín for garnish

Instructions

  1. Boil the trotolle pasta according to package instructions; drain and rinse with cold water.
  2. Cut the corn off the cobs and combine with the cooled pasta in a large bowl.
