- 4 large russet potatoes
- 2 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- Black pepper, to taste
- 1β2 teaspoons dried oregano
- 1/2 cup chopped fresh parsley
- 1 large tomato, diced
- 1/2 cup chopped pitted Greek olives
- 1/2 cup crumbled feta cheese
- 1/2 cup Greek tzatziki sauce
Instructions
