Ingredients
- 2 pounds Yukon gold potatoes, sliced into 1/8” pieces
- 1/2 tbsp avocado oil
- 1 tbsp unsalted butter
- 3 cloves garlic
- 1 small onion, finely chopped
- 1 green chili (or serrano chili)
- 1/2 green bell pepper, finely chopped
- 2 tbsp tomato paste
- 2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1/4 tsp cardamom powder
- 2 tablespoons butter
- 2 1/2 tablespoons flour
- 2 cups milk
- 1 teaspoon salt
- 2 cups grated sharp cheddar cheese (1 cup for the sauce + 1 cup for the topping)
- 1/2 tsp garam masala
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish with avocado oil.
- In a medium saucepan, melt 1 tablespoon of unsalted butter over medium heat; add finely chopped onions, green chili, garlic, and green bell pepper. Sauté until soft.
- Stir in tomato paste along with all spices (coriander, cumin, turmeric, red chili, cardamom). Cook for another minute until fragrant.
- In the same saucepan, add 2 tablespoons of butter until melted. Whisk in flour until smooth.
- Gradually add 2 cups of milk while whisking continuously to avoid lumps. Bring to a simmer until thickened. Remove from heat and stir in salt and 1 cup of grated cheddar cheese.
- Layer half of the sliced potatoes in the bottom of your prepared baking dish. Pour half of the spicy sauce over them followed by half of the cheese sauce. Repeat with remaining potatoes, sauces, and top with another cup of grated cheddar cheese.
- Cover with foil and bake in preheated oven for about 60 minutes. Remove foil and bake for an additional 30 minutes until golden brown and bubbly.
- Once out of the oven, let it sit for about 10 minutes before serving.
