- 175g softened butter
- 175g light brown sugar
- 3 large eggs
- 175g self-raising flour
- 2 tsp ground mixed spice
- 115g mixed dried fruit
- 2 tbsp apple juice or orange juice
- 115g icing sugar
- 1โ2 tbsp warm water
Instructions
- Preheat oven to 160ยฐC (320ยฐF) and line a muffin tray.
- In a mixing bowl, cream butter and sugar until smooth. Add eggs one by one, mixing well.
- Gradually fold in flour and mixed spice until combined.
- Gently mix in dried fruit and juice; spoon mixture into muffin tray.
- Bake for 25โ30 minutes until golden brown. Cool on a wire rack.
- Prepare icing by mixing icing sugar with warm water; decorate cooled cakes.
