  • 155 g confectioner’s sugar
  • 90 g egg whites (from 3 large eggs)
  • 55 g granulated sugar
  • ΒΌ teaspoon cream of tartar
  • ΒΌ cup freeze-dried mango, finely crushed
  • Β½ cup unsalted butter, softened
  • 1Β½ cups powdered sugar
  • 2 tablespoons coconut milk
  • ΒΌ teaspoon coconut extract
  • Few drops yellow food coloring (optional)

Instructions

  1. Preheat the oven to 300Β°F and line two baking sheets with parchment paper.
  2. In a food processor, sift together almond flour and powdered sugar until fine.
  3. In an electric mixer, whip egg whites, cream of tartar, and granulated sugar to stiff peaks.
  4. Gently fold the dry ingredients into the meringue until smooth.
  5. Pipe the mixture onto prepared sheets in uniform circles and let them dry for at least 30 minutes.
  6. Bake for 15-20 minutes until firm; cool completely before removing from parchment.
  7. For the filling, whip butter until creamy; gradually add powdered sugar, coconut milk, extract, and mango powder until smooth.
  8. Assemble by filling each macaron shell with the buttercream.
