  • 45 g Butter
  • 60 g Caster sugar
  • Grated rind of 1 lemon
  • 45 g Plain flour (or cornflour)
  • 500 ml Whole milk
  • 3 Large egg yolks
  • 1Β½ teaspoons Vanilla bean paste or extract
  • 60 g Demerara sugar for topping

Instructions

  1. Preheat your oven to 180Β°C (350Β°F).
  2. Peel and slice the cooking and eating apples, then place them in a saucepan with butter and caster sugar over medium heat until slightly softened.
  3. In another bowl, whisk together plain flour, caster sugar, milk, egg yolks, and vanilla until smooth. Cook over low heat in a saucepan while stirring until thickened.
  4. Layer the softened apples in a baking dish and pour the custard mixture evenly over them.
  5. Mix the demerara sugar with ground cinnamon and sprinkle it on top of the custard layer.
  6. Bake for about 20 minutes or until golden brown on top.
