  • Β½ cup milk

  • 6 tablespoons unsweetened cocoa powder
  • Zest of one lemon
  • 2 tablespoons Lebkuchen spice mix
  • 1 teaspoon cinnamon
  • Β½ teaspoon fine sea salt
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 cup icing sugar/powdered sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons lemon juice
  • a small amount of water, if needed

Instructions

  1. In a small saucepan, heat water, sugar, and honey until sugar dissolves; cool slightly.
  2. In a stand mixer bowl, combine flour, candied peel, hazelnuts, cocoa powder, lemon zest, spice mix, cinnamon, salt, baking soda, and baking powder.
  3. Pour in the warm honey mixture; mix well. Add egg and milk; knead into a stiff dough.
  4. Chill the dough overnight or up to three days.
  5. Preheat oven to 350Β°F (180Β°C). Shape chilled dough into logs on cookie sheets.
  6. Bake for 12-14 minutes until puffed but soft.
  7. Prepare glaze by mixing icing sugar with cocoa powder and lemon juice; brush onto warm cookies.
  8. Cool completely before slicing into diamond-shaped cookies.
