Instructions

  1. Prepare the lemon peels by removing the peel in long strips with a vegetable peeler and trimming away the white pith using a paring knife.
  2. Steep the prepared lemon peels and lemon juice in a large bowl or bottle for four days at room temperature, covered.
  3. Make simple syrup by stirring water and sugar in a large saucepan over medium heat until dissolved; let cool completely.
  4. Combine the cooled syrup with the steeped lemon mixture, then strain through a mesh strainer to remove peels.
  5. Transfer limoncello into bottles, seal, and refrigerate for at least four hours before serving chilled.
