  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Prepare your vegetables by washing and chopping the carrots, onion, celery, and garlic.
  2. Heat olive oil in an Instant Pot or large pot over medium heat. Sauté the carrots, onion, celery, and garlic until softened (5-7 minutes).
  3. Stir in black pepper, dried parsley, thyme, salt, and bay leaves to combine.
  4. Add boneless chicken breasts and low sodium chicken broth; bring to a boil then reduce heat to simmer for about 30 minutes.
  5. Stir in dry orzo pasta and cook according to package instructions (about 8-10 minutes).
  6. Remove cooked chicken, shred it using two forks, return to the soup along with fresh squeezed lemon juice.
