Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 1 onion (or 2 shallots)
- 1 large carrot
- 2 stalks celery
- 1 clove garlic
- 4 sprigs fresh thyme (or 1/2 tsp dried thyme)
- 1½ litres / 6 cups chicken stock
- 75g / 1/2 cup giant or pearl couscous
- 250g / 2 cups cooked turkey or chicken
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp parsley (chopped)
Instructions
- Heat olive oil and butter in a large pot over low heat. Add chopped onion, carrot, celery, and minced garlic with thyme. Sauté for about 5 minutes until softened.
- Pour in the chicken stock along with cooked turkey and bay leaves. Bring to a boil; season with salt and pepper.
- Stir in giant couscous or noodles and cook over medium heat for about 10 minutes until tender.
- Remove from heat and garnish with chopped parsley before serving.
