  • 1 1/2 teaspoons rice or white vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon kosher salt, divided
  • 1 pound ground beef
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons cornstarch
  • 3 heads baby bok choy, roughly chopped (about 3 cups)
  • 20 wonton wrappers, cut into quarters
  • Sriracha Hot Sauce or Chili Crunch (optional)

Instructions

  1. Prepare the broth by heating chicken stock in a large saucepan, adding green onion whites, sliced garlic, ginger, soy sauce, vinegar, brown sugar, and salt. Bring to a boil.
  2. In a mixing bowl, combine ground beef with finely chopped green onion tops, grated ginger, soy sauce, sesame oil, and cornstarch. Mix well.
  3. Form meat mixture into balls and add them to the boiling broth. Reduce heat and simmer for about 5 minutes.
  4. Stir in quartered wonton wrappers and chopped bok choy. Cook for an additional 8 minutes.
  5. Serve hot garnished with reserved green onions and Sriracha if desired.
