  • 1 yellow bell pepper
  • 9 lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 1 cup parmesan cheese
  • 2 cups marinara sauce
  • Fresh basil leaves (for garnish)
  • Olive oil (for brushing)
  • Salt and pepper (to taste)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. Slice the eggplant, zucchinis, and bell peppers. Brush with olive oil and season with salt and pepper. Roast for about 20 minutes until tender.
  3. Cook the lasagna noodles according to package instructions; drain well.
  4. In a bowl, mix ricotta cheese with minced garlic, oregano, basil, salt, and pepper.
  5. In a baking dish, layer marinara sauce, noodles, roasted vegetables, ricotta mixture, mozzarella, and parmesan cheeses. Repeat layers.
  6. Top with final noodles and pour remaining marinara sauce over the top. Sprinkle remaining cheeses.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until golden brown.
  8. Let rest for at least 10 minutes before serving; garnish with fresh basil.
