  • 3 large bell peppers
  • 1 pound lean ground beef
  • 1 cup keto tomato sauce
  • 1 cup whole milk ricotta cheese
  • 1 Β½ cups shredded mozzarella cheese (divided)
  • ΒΌ cup Parmesan cheese
  • 1 tsp olive oil
  • ΒΌ tsp fennel seeds

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Wash and prepare the bell peppers by cutting off their tops and removing the seeds.
  3. In a large skillet over medium heat, sautΓ© olive oil and fennel seeds for about 30 seconds.
  4. Add the ground beef and cook until browned (5–7 minutes).
  5. Stir in the keto tomato sauce and simmer for another 5 minutes.
  6. Remove from heat and mix in ricotta cheese along with half of the mozzarella until well combined.
  7. Stuff each bell pepper with the beef mixture, packing it down gently, and place them upright in a baking dish.
  8. Top with remaining mozzarella and Parmesan cheese; cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 10 minutes until bubbly.
  10. Garnish with chopped parsley before serving warm.
