- 3 large bell peppers
- 1 pound lean ground beef
- 1 cup keto tomato sauce
- 1 cup whole milk ricotta cheese
- 1 Β½ cups shredded mozzarella cheese (divided)
- ΒΌ cup Parmesan cheese
- 1 tsp olive oil
- ΒΌ tsp fennel seeds
Instructions
- Preheat your oven to 375Β°F (190Β°C).
- Wash and prepare the bell peppers by cutting off their tops and removing the seeds.
- In a large skillet over medium heat, sautΓ© olive oil and fennel seeds for about 30 seconds.
- Add the ground beef and cook until browned (5β7 minutes).

- Remove from heat and mix in ricotta cheese along with half of the mozzarella until well combined.
- Stuff each bell pepper with the beef mixture, packing it down gently, and place them upright in a baking dish.

- Remove foil and bake for an additional 10 minutes until bubbly.
