- 2 large onions
- 2 medium carrots
- 3 Yukon gold potatoes

- 5 cups water
- 8 oz Japanese curry roux
- 1 red apple (Fuji or Honeycrisp)
- 8 cups medium grain white rice
Instructions
- Chop onions, carrots, and potatoes into large chunks; mince garlic and grate the apple.
- Soak potato chunks in warm water for 15 minutes to remove excess starch.
- Salt the beef cubes and let sit at room temperature for 10 minutes.
- Heat oil in a pot over medium heat; sear beef cubes for 2-3 minutes until browned, then remove.
- Add butter and sautΓ© onions for about 8 minutes until caramelized.
- Stir in minced garlic, potatoes, carrots, and return beef to the pot.
- Pour in water; optionally add grated apple, honey, ketchup, and Worcestershire sauce.
- Simmer covered on medium-low heat for about 15 minutes.
- Skim off any scum; check potato doneness by piercing with a chopstick.
- Gradually add curry roux cubes until dissolved; simmer uncovered for another 15 minutes until thickened.
