Ingredients
Scale
- 16 oz spicy Italian sausage
- 1 cup onion
- 5 cloves garlic
- 1 tbsp Italian seasoning
- 1 tsp paprika
- 1/4 tsp red pepper flakes
- 2 tbsp tomato paste
- 1 cup carrots
- 5 cups chicken broth
- 1.5 lbs red or yellow potatoes
- 2 cups spinach
- 1/2 cup heavy cream
- 4 tbsp fresh thyme or parsley
- Salt
Instructions
- In a large pot or Dutch oven over medium heat, cook the crumbled spicy Italian sausage, chopped onion, and minced garlic for 7โ10 minutes. Break apart the sausage with a spoon until browned. Drain excess fat while leaving about 1 tablespoon for flavor.
- Stir in the Italian seasoning, paprika, red pepper flakes, and tomato paste. Cook this mixture for 1 minute while stirring constantly to toast the spices and enhance their flavor.
- Pour in the chicken broth while scraping the bottom of the pot to dissolve any remaining tomato paste. Bring this mixture to a boil.
- Add cubed potatoes and diced carrots to the pot. Reduce heat to medium-low and simmer uncovered for 15โ25 minutes until potatoes are fork-tender.
- Add fresh spinach to the pot. Cook for an additional 2โ3 minutes until wilted.
- Reduce heat to low. Stir in heavy cream and heat through without boiling. Season with salt and adjust red pepper flakes if desired.
- Serve hot, garnished with fresh thyme or parsley along with an extra pinch of red pepper flakes for added flavor.
