  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery

  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 4 cups chicken stock
  • 1 cup uncooked ditalini pasta

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef, cooking until browned. Remove beef with a slotted spoon and set aside.
  2. In the same pot, sautรฉ diced onion, carrots, and celery with salt and pepper for about 5 minutes.
  3. Stir in minced garlic, Italian seasoning, and tomato paste; cook for another minute until fragrant.
  4. Add tomato sauce, diced tomatoes, both types of beans, chicken stock, uncooked ditalini pasta, and cooked beef back to the pot. Season to taste.
  5. Bring to a simmer; reduce heat to medium-low and simmer gently for about 5 minutes or until pasta is al dente.
  6. Adjust seasoning as needed; garnish with grated Parmesan cheese and fresh parsley before serving.
