- 2 large eggs, separated
- 1/4 cup softened butter
- 1/2 cup granulated sugar, divided
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1.5 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup 2% milk
- 2 cups heavy whipping cream
- 1 pint fresh strawberries, hulled and sliced
- 1/2 teaspoon sugar
- Additional fresh strawberries for decoration
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat together the egg yolks, softened butter, and half of the sugar until creamy. Add in the vanilla extract and mix well.
- In another bowl, combine flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture while alternating with milk. Mix until smooth.
- In a clean mixing bowl, beat egg whites until soft peaks form. Gradually add in the remaining sugar and continue beating until stiff peaks develop.
- Carefully fold the whipped egg whites into the cake batter using a spatula.
- Pour the batter into a greased 9-inch round cake pan lined with parchment paper. Bake for about 15 minutes or until lightly golden brown and a toothpick comes out clean.

- Once cooled, slice the cake horizontally into two layers. Spread half of the whipped cream over one layer, top with sliced strawberries mixed with sugar. Place the second layer on top and spread remaining whipped cream over it.
