  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups cooked rice (brown or white)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 tablespoon chili powder
  • 0.5 teaspoon cumin
  • ยฝ cup sour cream or Greek yogurt
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, chili powder, and cumin. Sear the chicken for about 6 minutes on each side until golden brown and cooked through (165ยฐF). Remove from skillet and let rest.
  2. In the same skillet, sautรฉ sliced bell peppers and diced onion for around 5 minutes until soft. Add minced garlic, corn, and black beans; cook for an additional 2 minutes.
  3. Chop the rested chicken into bite-sized pieces and return it to the skillet along with cooked rice. Stir gently to combine all ingredients evenly.
  4. Adjust seasoning if needed, then remove from heat.
  5. Serve in bowls topped with sour cream or Greek yogurt, fresh cilantro, and lime wedges.
