  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk (or almond milk)
  • 1 cup unsalted butter
  • 16 chocolate batons (or 8 oz semi-sweet chocolate)

Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast. Gradually add cold milk until a soft dough forms. Knead lightly on a floured surface until smooth.
  2. Roll the dough into a rectangle and flatten cold butter between parchment paper into a thin rectangle. Place the butter on one half of the dough and fold over to encase it.
  3. Roll out the dough again into a larger rectangle and fold it into thirds like a letter. Repeat this process two more times to create layers, then chill for at least 30 minutes.
  4. Roll out the dough one last time and cut triangles. Place one chocolate baton at the base of each triangle and roll them up from base to tip.
  5. Let shaped croissants rise on parchment-lined sheets until doubled in size (about 45 minutes). Preheat oven to 400Β°F (200Β°C) during this time and brush with milk if desired.
  6. Bake for about 20 minutes or until golden brown.
