- In another bowl, cream softened butter until smooth. Gradually add dry ingredients along with eggs, milk, and vanilla; mix until fluffy.
- Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes until a toothpick comes out clean. Cool for 5 minutes before transferring to wire racks.
- Prepare vanilla pudding as per package instructions. Cut tops off cooled cupcakes and fill with pudding.
- Melt chocolate chips and coconut oil in intervals until smooth; drizzle over filled cupcakes.
