  • 4 large eggs
  • 1 cup whole milk
  • 1 cup coconut milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup mango puree (fresh or canned)
  • 2 cups whipped topping

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a rectangular baking dish.
  2. In a bowl, mix flour, baking powder, and sugar until well combined.
  3. In another bowl, beat eggs until fluffy and stir in whole milk. Fold wet ingredients into dry ingredients until smooth.
  4. Pour batter into the prepared dish and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  5. In a separate bowl, whisk together whole milk, coconut milk, condensed milk, and half of the mango puree.
  6. Poke holes in the cooled cake and pour the milk mixture over it; refrigerate for at least one hour.
  7. Top with whipped topping and drizzle with remaining mango puree before serving.
