  • Confectioner's sugar (for dusting)

Instructions

  1. Preheat oven to 350Β°F (175Β°C).
  2. Cream butter, sugar, and vanilla bean paste until fluffy. Add flour and salt; mix just until combined.
  3. Press dough into a greased 9Γ—9 baking pan. Chill for 15 minutes.
  4. Bake crust for 15 minutes until lightly browned.
  5. Infuse hibiscus in lemon juice for 15 minutes, strain out leaves.
  6. In another bowl, whisk together eggs and sugar. Stir in strained lemon-hibiscus mixture and blend in flour until smooth.
  7. Pour filling over cooled crust and bake for an additional 20-25 minutes until set.
  8. Cool completely before slicing and dust with confectioner’s sugar.
