Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Prepare a 9 x 5 loaf pan by lining it with parchment paper and spraying it with cooking spray.
  2. In a mixing bowl, whisk together the egg, applesauce, honey or maple syrup, vanilla extract, cinnamon, baking soda, baking powder, and salt until well combined.
  3. Stir in the shredded zucchini gently.
  4. Add the flour and mix just until combined; avoid overmixing.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
