- 8 ounces rotini noodles
- 3/4 cup chopped English cucumber
- 3/4 cup shredded carrot
- 1 yellow bell pepper (chopped)
- 1/2 cup diced red onion
- 5 ounces sliced olives
- 14 ounces cherry tomatoes (halved)
- 3β4 ounces turkey pepperoni (quartered) or grilled chicken
- 6 ounces fresh mozzarella (cubed)
- 2 ounces fresh basil (thinly sliced)
- 1/3 cup light Caesar dressing
- 1/3 cup light Greek dressing
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook the rotini noodles according to package instructions until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooked pasta with cucumber, carrot, bell pepper, red onion, olives, cherry tomatoes, turkey pepperoni or chicken, mozzarella cheese, and basil.
- Drizzle the light Caesar and Greek dressings over the mixture. Season with salt and pepper.
- Toss everything together until evenly coated. Serve immediately or refrigerate until ready to serve.
