  • 2 carrots
  • 2 leeks
  • 1 brown onion

  • Β½ inch piece of ginger
  • 4 bay leaves
  • ΒΌ teaspoon turmeric
  • 1 teaspoon black peppercorns
  • Sea salt to taste
  • Handful of fresh parsley (for garnish)
  • 1 cup fideo noodles or angel hair pasta

Instructions

  1. Prepare vegetables by peeling and chopping potatoes, carrots, onion, ginger, and garlic. Trim ends of leeks and celery.
  2. In a large pot, combine chicken, prepared vegetables, bay leaves, turmeric, black peppercorns, and salt. Cover with water and bring to a boil over high heat.
  3. Once boiling, reduce heat to low and let simmer for at least 2 hours.
  4. Remove chicken and vegetables from the pot; discard bay leaves and separate chicken from bones.
  5. Strain broth through a fine mesh strainer back into the pot.
  6. Cut boiled vegetables into smaller pieces, return them along with shredded chicken to the pot.
  7. Bring broth back to a boil; add fideo noodles or pasta and cook until al dente.
  8. Serve hot topped with freshly chopped parsley.
