Ingredients
- 4 large russet potatoes (washed and patted dry)
- 4 tablespoons unsalted butter (melted, divided)
- 1 teaspoon kosher salt
- ½ teaspoon pepper
Instructions
- Preheat your oven to 425°F and arrange a rack in the middle.
- Place one potato between two chopsticks or skewers to prevent cutting all the way through.
- Slice the potatoes vertically about ⅛ inch apart without cutting through the bottom.
- Put the sliced potatoes on a baking sheet and brush half of the melted butter over them.
- Season generously with kosher salt and pepper.
- Bake for 30 minutes until softened.
- Remove from the oven, gently pull apart layers, and brush with the remaining melted butter.
- Return to bake for another 30-35 minutes until crispy and golden.
