Ingredients
- 175 g Baking spread (or butter)
- 175 g Caster sugar
- 3 Eggs (large)
- 2 tsp Vanilla extract
- 175 g Self raising flour
- 25 g Black food coloring
- 150 g Tinned custard
- Green food coloring
- Yellow food coloring
- 200 g Butter (softened, unsalted)
- 400 g Icing sugar
- 1โ2 tbsp Milk
- Candy eyes
- Green sprinkles
Instructions
- Preheat the oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
- In a bowl, cream baking spread and caster sugar until fluffy. Add eggs one at a time along with vanilla extract.
- Gently fold in self-raising flour and black food coloring until well combined.
- Divide the mixture into the cupcake cases and bake for 25-30 minutes until a skewer comes out clean. Cool completely on a wire rack.
- Core the center of each cupcake and fill with lime marmalade.
- For the buttercream, mix softened butter and icing sugar until smooth, then add vanilla, milk, and food coloring to achieve the desired shade.
- Frost each cupcake generously with green buttercream and decorate with candy eyes and sprinkles.
