- 2 chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp lemon juice
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup chopped fresh cilantro
- 1 cup lettuce or mixed greens (optional)
- 2 tbsp olive oil (for dressing)
- 1 tbsp fresh lime juice
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt & pepper to taste
Instructions
- Rub the chicken breasts with olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Let marinate for about 10 minutes if time allows.
- Preheat your grill or grill pan over medium heat. Grill the chicken for 5–6 minutes per side or until cooked through (internal temperature should reach 165°F). Once done, let the chicken rest before slicing it into strips.
- In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper until well combined.
- In a large mixing bowl, combine diced avocado, halved cherry tomatoes, chopped cilantro, and mixed greens (if using). Add sliced grilled chicken on top of the salad mixture. Drizzle with dressing just before serving.
- Toss gently to combine all ingredients. Serve immediately to enjoy at its freshest!
